My mother has been trying to teach me her braised pork over the phone for two years. Her measurements are "some," "a little more," and "until it looks right." I've produced eleven versions. None of them is hers. The flavor is close enough that my brother eats two bowls and says "nearly." Nearly is the cruelest word in a family kitchen. I keep a notebook now, converting her pinches and splashes into grams like I'm translating a poem into a spreadsheet. Eleven versions in, and honestly the calls have become the point. We talk longer than the pork needs to simmer.
